This pie is worth making for its soft, light crust and an apple filling scented with cinnamon and lightly tart. Cooking the filling dry enough is the hard part, since a wet filling soaks the base.
The crust carries 120g of unsweetened yogurt, which makes it softer and lighter than a standard pie crust. The dough needs a full 2 hours in the fridge before it is rolled.
This batch weighs about 1.6kg, at roughly 186 calories per 100g. It is at its best warm from the oven with a hot cup of tea. The apple filling can be cooked a day ahead.
Method
Put 170g butter and 400g flour in a blender and blend on medium speed until fine.
Add 120g unsweetened yogurt, 54g kOBE Monk Fruit Blend and 1 chicken egg and blend until everything comes together.
Turn the mixture into a large bowl and knead by hand until the dough is smooth. Wrap it and chill it for 2 hours.
Wash, peel and cut the apples into small cubes. Toss them with lemon juice, the finely grated lemon zest, 1 teaspoon ground cinnamon and 27g kOBE Monk Fruit Blend.
Tip the apples into a saucepan and cook over low heat, stirring, until the blend dissolves and the fruit takes up the flavor. Once the liquid thickens, take it off the heat and let it cool.
Take the dough out, divide it in half, then divide each half into smaller pieces and roll them thin.
Line the pan with one layer of dough, spoon the apple filling into the middle and lay another layer over the top, then brush the edges with egg yolk.
Bake at 200 degrees C for about 30 minutes, until the top is evenly golden. Turn off the oven, wait 2 minutes, then take the pie out.
Tips
Cook the apple filling until the liquid thickens, since a wet filling soaks the base.
A full 2 hours in the fridge before rolling keeps the dough from sticking to your hands.
Grate only the colored outer zest of the lime, because catching the white pith turns the filling bitter.
Egg yolk brushed along the rim seals the two layers of crust together.
