Method
Rinse 1kg chicken bones and blanch them for 5 minutes in boiling water, then lift them out and rinse again. Put the bones and 200g chicken breast in a pot with 3 bruised shallots and simmer.
After 30 minutes lift the breast into cold water, then shred it. At the full hour, remove the bones and strain the stock.
Soak the shiitake mushrooms until soft, rinse and chop them. Rinse the abalone and slice it thinly. Strip the corn kernels. Peel the carrot and dice it to the size of the corn kernels. Cut the green beans into short pieces.
Boil the corn, green beans and carrot for 5 minutes, then lift them into cold water. Stir 70g tapioca starch into 100ml water until smooth.
Return the strained stock to the heat and add the shredded chicken, shiitake, abalone and 100g crab meat. Season with 1 tablespoon seasoning powder, 1 tablespoon kOBE Monk Fruit Blend and 2/3 teaspoon salt.
Once it boils, pour the starch mixture in slowly while stirring, and let it bubble a moment until the soup thickens.
Crack 2 eggs into a bowl and pour them into the pot through a sieve to form fine threads.
Ladle into bowls and serve while hot.
