Nem Chua Thanh Hoa (Fermented Pork Rolls) Recipe

Nem chua Thanh Hoa needs the right ratio of pork, skin and roasted rice powder, and the ferment does the rest. Given enough days the rolls turn evenly pink, gently sour and crunchy from the skin. The hardest part is wrapping them tightly, since a loose roll falls apart and spoils quickly.

The pork has to be very fresh and completely dry, because any tap water turns the batch sharply sour and slippery. Rub the skin with vinegar and salt, then rinse it in warm water until it is white and clean smelling.

This batch weighs about 1kg, at roughly 128 calories per 100g.

Method

  1. Grind 500g lean pork rump while the meat is still cold.
  2. Rinse 300g pork skin, boil it for 20 minutes, scrape off all hair and fat, then cut it into thin strips. Rub the strips with vinegar and salt, rinse in warm water and drain very well.
  3. Put the pork and skin in a bowl with 30g roasted rice powder, 30g tapioca starch, 15g minced garlic, 2 tablespoons kOBE Monk Fruit Blend, 1/2 teaspoon ground pepper, 1 tablespoon peppercorns and 1.5 tablespoons fish sauce, and mix thoroughly.
  4. Lay dinh lang leaves, 10g sliced chili and 15g sliced garlic on a sheet of cellophane, spoon the pork mixture on top and roll it up very tightly.
  5. Press both ends flat, fold the seam closed, wrap in a few layers of banana leaf and tie each end with string.
  6. Leave the rolls somewhere cool and airy for 3 to 5 days to ferment, then they are ready to eat.

Tips

  • Rubbing the skin with vinegar and salt and rinsing it in warm water leaves it white and clean smelling.
  • Roll each one tightly, since only a tight roll binds together as it ferments.
  • Pork kept cold through the whole mixing stage gives a chewier roll and a more even ferment.

  • Warm weather speeds the souring up, so move the rolls to the refrigerator as soon as they turn pink and smell gently sour.
