Cola braised chicken wings come out with glossy skin and a thick sauce that clings to every piece, sweet with a light kick of heat. They work as a snack with drinks or with hot rice. The hardest part is the braise, since the sauce goes from thin to syrupy very quickly.
Blanching the wings before frying is the key move, as it cleans the meat and leaves it softer through the braise. The common mistake is braising over high heat, where the liquid evaporates so fast that the bottom of the pan scorches before the wings take on any flavour.

Method
Rub 400g chicken wings with salt to clean them, rinse under cold water, then chop into bite sized pieces.
Put the wings in a pan with 200ml water, bring to a boil, then lift them out and drain.
Heat oil in a pan and fry the wings until they are just golden.
Add 1/2 of a 390ml bottle of sugar free cola, 1 teaspoon seasoning powder, 1 teaspoon oyster sauce, 10g minced ginger and 10g minced chili to the pan, stirring until the seasonings dissolve.
Braise over low heat until the liquid has almost reduced away and thickened.
Season with 1 tablespoon fish sauce and 1/2 tablespoon kOBE Monk Fruit Blend, stir through, then braise for 2 more minutes until the sauce reaches the thickness you want.
Lift the wings onto a plate, spoon the sauce over, scatter with toasted sesame seeds and serve hot.
Tips
Blanching the wings in boiling water before frying cleans off any strong smell and leaves the meat softer through the braise.
Frying only until the wings turn lightly golden is enough, because the braise finishes the cooking without toughening the skin.
Low heat lets the liquid reduce slowly so the sauce coats each piece rather than burning.
