Xoi Hoa Dau Biec (Butterfly Pea Coconut Sticky Rice), Sweetened with Monk Fruit

Good butterfly pea sticky rice has grains of a blue violet color, chewy but still separate. The hard part is the bottom layer going wet, and the grains breaking down if they are tossed too soon.

The rice soaks in butterfly pea water for 8 hours or overnight, then steams for 25 to 30 minutes over a cloth laid in the basket. The seasoning is folded through after the first steam, and the rice goes back for another 20 minutes.

This batch weighs about 1.3kg, at roughly 316 calories per 100g.

Method

  1. Steep 15g dried butterfly pea flowers in about 2.5 liters of boiling water, let it cool completely, then lift out the flowers and strain the colored water.
  2. Wash 1kg nep nhung glutinous rice, drain it, and soak it in the butterfly pea water for 8 hours or overnight.
  3. Drain the rice, lay a thin cloth in the steamer basket, spread the rice evenly, and steam over high heat for 25 to 30 minutes, poking a few holes now and then so the steam moves through.
  4. Tip the rice into a large bowl and fold through 20g cooking oil, 54g kOBE Monk Fruit Blend, 80g coconut milk and 120g unsweetened oat milk with a light hand.
  5. Return the rice to the basket, tuck in a few pandan leaves, and steam a second time for about 20 minutes.
  6. Press the rice into molds or small bowls and turn it out onto plates.

Tips

  • A cloth laid in the steamer spreads the steam evenly so the bottom of the rice does not go wet.
  • Season after the first steam so the grains take it up without breaking.
  • Poke a few holes through the surface of the rice so steam rises evenly and everything cooks at once.
  • Fold gently with large chopsticks, since vigorous stirring breaks the grains and makes them sticky.
  • The mixture is thinner, so let the rice rest 5 minutes to absorb it before the second steam.
  • Soak the rice a full 8 hours in the butterfly pea water, since a rushed soak colors only the outside of the grain.
