What makes this Taiwanese cheese sponge is a moist crumb with salt and sweetness alternating through a layer of cheese in the middle. The tricky part is folding in whipped whites without knocking the air out.
The milk, honey, oil and butter are heated before the flour goes in, and this scalding gives the crumb its moisture and slight chew. An hour at 165 degrees C keeps the top from cracking. The whites are folded in twice, turned gently from the top down.
This batch weighs about 729g, at roughly 205 calories per 100g.
Method
Put 120ml of oat milk, 30ml of honey, 40ml of cooking oil and 40g of butter in a pot and bring it to a boil, swirling the pot so the butter melts and everything combines.
Add 80g of cake flour and stir until the mixture is thick.
Add 4 egg yolks and 1 whole egg to the flour mixture and whisk thoroughly until the yolks disappear. Add a little more oat milk and whisk to loosen the mixture.
Whip the remaining egg whites, and once bubbles appear add 72g of kOBE Monk Fruit Blend and keep whipping until stiff.
Fold two thirds of the whites into the batter, turning gently from the top down until even, then fold in the rest the same way.
Line a square or rectangular tin with baking paper. Pour in a third of the batter, lay 4 slices of cheddar cheese over and scatter parmesan across the surface. Pour in the rest of the batter and scatter parmesan a second time.
Heat the oven to 165 degrees C and bake for about 60 minutes until cooked through.
Tips
Heating the milk and butter mixture before adding the flour gives a moist crumb with a slight chew.
A low temperature and a long bake keep the top from cracking.
Fold the whites in twice, turning from the top down to keep the air in.
Honey is still sugar, so this recipe uses exactly 30ml.
Lay the four cheddar slices between two layers of batter, since cheese near the surface scorches.
