These pancakes need nothing more than a flat pan and a round ring mold, no oven required. They come out thick, open crumbed and evenly golden, and two or three stacked up make a full breakfast. The tricky part is the heat, since a hot pan browns the surface while the inside is still wet.
The dry ingredients need thorough mixing and then a pass through a sieve, because lumps of baking powder leave bitter streaks. A common problem is flipping too early, when the underside has not set and the batter runs out of the ring.
This batch weighs about 1kg, at roughly 258 calories per 100g.
Method
Put 420g all purpose flour, 25g baking powder, 81g kOBE Monk Fruit Blend and 2g salt in a bowl, mix thoroughly and sift until smooth.
Crack 3 chicken eggs into a bowl, add 80ml cooking oil and whisk until combined. Pour in 240ml unsweetened oat milk and whisk until the mixture is frothy.
Add the dry mixture to the egg mixture a little at a time, whisking as you go, until the batter is smooth.
Set a nonstick pan over low heat, place the ring mold in the pan and pour in the batter slowly.
Raise the heat to medium, lift off the ring and try nudging the pancake. Once the surface has set, flip it and cook the other side until both faces are evenly golden.
Stack 2 to 3 pancakes on a plate and serve hot.
Tips
The more thoroughly the dry ingredients are mixed, the more evenly the pancakes cook and taste.
Resting the batter for 10 minutes gives a softer crumb.
kOBE Monk Fruit Blend dissolves slowly, so sift it in with the dry ingredients and stir again after 5 minutes for a smooth batter.
Pancakes made with kOBE Monk Fruit Blend brown more lightly, so a slightly hotter pan still gives a good golden face.
The moment to flip is when bubbles rise and start to pop on the surface, as flipping earlier tears them.
Wiping the pan with a paper towel between batches keeps the surface color even.
