Dark chocolate gelatin pudding is only two jobs: cook the milk with gelatin until it dissolves, then stir it into melted chocolate. It works because the pudding wobbles soft and still carries a deep cocoa flavour. The hardest part is the gelatin, since a little too much sets it as firm as jelly.
Soak the gelatin until it swells completely soft before heating. A firm core left inside sets the pudding in patches, firm in places and loose in others, with a surface that never comes out smooth.
This batch weighs about 497g, at roughly 223 calories per 100g.
Method
Melt 75g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, keeping the base of the bowl off the water, add 25g of finely ground kOBE Monk Fruit Blend and stir until smooth and glossy.
Pour 200ml of oat milk into a bowl and soak 2 gelatin sheets of 2g each in it for about 5 to 10 minutes until soft and swollen.
Put the gelatin and milk mixture into a clean pot with 45g of kOBE Monk Fruit Blend and 150g of whipping cream, stir, and heat gently until everything dissolves, then turn off the heat.
Tip the chocolate into the pot and stir gently until it combines.
Pour the mixture into glass jars or molds and let them cool completely at room temperature. To speed it up, sit the molds in a basin of cold water.
Once the pudding is fully cool, chill it for 2 to 3 hours to set, and decorate with fresh fruit when serving.
Tips
The gelatin has to soften right through before heating, because a firm core sets the pudding in patches.
Heat the milk mixture only until warm and never let it boil, since boiled gelatin loses its setting power.
A water bath still beats the microwave for melting chocolate, and the mixture comes out silky rather than grainy.
Let the pudding cool completely before it goes in the fridge, since going in hot leaves water beading on the surface.
Fill the jars about four fifths full to leave room for decoration.
