Chocolate pot de creme means cooking a chocolate cream with egg yolks until it thickens, then chilling it in small cups. It works because the cream sets as thick and smooth as velvet, silky in every spoonful. The hardest part is the heat, since one single boil pits the surface.

The hot cream has to go into the eggs in a thin stream with constant stirring. Tipping it in all at once cooks the yolks into grains, and no sieve will bring the smoothness back.

This batch weighs about 859g, at roughly 330 calories per 100g.

Method

  1. Melt 75g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 25g of finely ground kOBE Monk Fruit Blend and stir until smooth and glossy.
  2. Tip the chocolate into a pot with 500ml of whipping cream, 2 tablespoons of cocoa powder and a pinch of salt, and heat gently until everything melts through. Watch the heat the whole time and never let the mixture boil.
  3. Beat 54g of kOBE Monk Fruit Blend with 3 egg yolks and 2 teaspoons of vanilla.
  4. Pour the chocolate cream slowly into the egg mixture, stirring as you pour, then return everything to the pot.
  5. Stir steadily over very low heat until the mixture thickens and coats the back of a spoon.
  6. Strain the mixture through a sieve and pour it into small cups, let them cool, then chill for about 4 hours or overnight.
  7. Grate a little unsweetened dark chocolate over the tops and finish with whipped cream and raspberries as you like.

Tips

  • Never let the chocolate cream boil, since boiling pits the surface and costs the cream its smoothness.
  • Pour the hot cream into the eggs slowly so the yolks do not cook into lumps.
  • Straining the mixture through a sieve before it is poured out makes the finished cream noticeably smoother.
  • The bowl and the whisk have to be bone dry, because chocolate that catches water seizes into a lump.
  • Press cling film onto the surface while chilling and no skin forms on top.
