Chocolate Banana Loaf with Ganache, Sweetened with Monk Fruit

A chocolate banana loaf with ganache leans on mashed ripe banana to keep the crumb moist through seventy minutes in the oven. It works because the crumb stays soft and wet, with a piece of chocolate turning up every few bites. The hardest part is judging when it is done, since a thick loaf colours at the edges while the middle is still wet.

Whipping the two egg whites separately and folding them in is the move that matters. Skip that step and the crumb comes out dense and heavy rather than light.

This batch weighs about 1.1kg, at roughly 229 calories per 100g.

Method

  1. Melt 75g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 25g of finely ground kOBE Monk Fruit Blend, stir until smooth and glossy, pour it onto a tray lined with baking paper, chill until firm, then chop it into small chips.
  2. Heat the oven to 160 degrees C. Brush oil over a loaf tin and line it with baking paper standing 2cm above the rim.
  3. Mix 175g of kOBE Monk Fruit Blend, 175g of self raising flour, half a teaspoon of baking soda, 4 tablespoons of cocoa powder and the chopped chocolate together in a large bowl.
  4. Mash 175g of ripe banana in another bowl and stir it with 1 whole egg and 2 egg yolks, then with 100ml of sunflower oil and 50ml of oat milk.
  5. Whip 2 egg whites to stiff peaks in a separate bowl.
  6. Mix the dry ingredients into the banana mixture until even, then tip in the whipped whites and fold gently.
  7. Pour the batter into the tin and bake for 70 minutes, until a skewer pushed into the middle comes out clean.
  8. Let the tin cool down, then turn the loaf out.
  9. Make the topping: melt 75g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 25g of finely ground kOBE Monk Fruit Blend, stir until smooth and glossy, then stir in 100ml of soured cream and chill it.
  10. Spread the chocolate mixture over the loaf, scatter dried banana pieces on top, and cut it into slices as it is eaten.

Tips

  • The riper the bananas, the sweeter and more fragrant the loaf.
  • Chop the chocolate into small even chips, since large pieces all sink to the bottom of the tin during baking.
  • Whipping the whites separately and folding them in keeps the crumb light and open.
  • Test the skewer in the very center, since the edges set first and a test near the rim reads done too early.
  • Keep the loaf in a cake tin and slice only what will be eaten, so the cut face does not dry out.
