Banh chuoi in an air fryer is handy for a kitchen without an oven. The cake rises soft, smells of ripe banana and butter, and the top is lined with golden banana slices.
The tricky part is the mixing, since overworking the batter makes the cake tough and heavy. Two thirds of the bananas are mashed and the rest sliced for the top, then it bakes at 160 degrees C for about 20 to 25 minutes.
This batch weighs about 810g, at roughly 153 calories per 100g. Let it cool in the tin for five minutes before turning it out. It goes well with afternoon coffee or tea.
Method
Peel 3 to 4 ripe bananas, mash 2/3 of them with a fork or a blender and cut the rest into thin slices for the top.
Melt 30g unsalted butter, or leave it at room temperature until soft.
Whisk 2 chicken eggs with 50 to 70g kOBE Monk Fruit Blend until light and airy. Add the mashed banana, 50ml unsweetened oat milk, the melted butter and 1 teaspoon vanilla and mix through.
Sift 150g all purpose flour and 1 teaspoon baking powder into the mixture and fold gently so the cake does not turn tough. The batter should be smooth and thick but not stiff.
Line the tin with parchment paper or brush it with a thin layer of oil, pour in the batter, level it and arrange the banana slices on top.
Preheat the air fryer to 160 degrees C for 5 minutes, then bake the tin at 160 degrees C for about 20 to 25 minutes. A toothpick inserted into the center comes out dry when it is done.
Let the cake cool in the tin for 5 minutes before turning it out so it does not crack.
Tips
Bananas with brown spots on the skin and soft flesh give more aroma and more natural sweetness.
Preheat the air fryer to 160 degrees C before the tin goes in, since a cold basket leaves the cake flat and damp inside.
Fold the batter gently and stop as soon as it comes together, since overmixing makes the cake tough.
Let the cake cool in the tin for 5 minutes after baking before turning it out.
