Pa Kimchi (Korean Spring Onion Kimchi), Made with Monk Fruit Sweetener

Pa kimchi comes out deep red, sharply spicy and crisp, and after a few days of fermenting it turns clean and sour, which is exactly what a bowl of rice wants. There are few steps, but the mixing has to be gentle. The difficulty is that spring onions bruise easily, and bruised onions turn the whole batch soft and quick to spoil.
The way to mix is to pour the paste over the onions and turn them over a few times, never squeezing. The glutinous rice paste has to be cooked and then cooled completely, since adding it hot splits the paste and half cooks the onions.
This batch weighs about 1.8kg, at roughly 74 calories per 100g.
Method
Put 300ml water in a pot, add 50g glutinous rice flour, stir until dissolved, then set it over the heat and stir constantly until it bubbles and thickens. Turn off the heat and let it cool.
Put 130g coarse chili flakes, 25g fine chili powder, 40.5g kOBE Monk Fruit Blend, 25g minced garlic, 150g fish sauce and 70g malt syrup in a large bowl and mix thoroughly.
Add the cooled rice paste and mix once more until even.
Put 1kg spring onions and the paste in a large basin and mix very gently, pouring the paste over the onions and turning them a few times so every stalk is coated.
Tips
In Korea this kimchi is usually made with jjokpa onions, and in Vietnam the thin stalked spring onions are the closest match.
Cooking the glutinous rice flour is what makes the paste cling to the onions and ferment evenly.
Malt syrup can be swapped for honey.
The spring onions need several hours to drain completely after washing, because leftover water turns the kimchi slimy.
