Garden Salad with Mayonnaise and Vinaigrette, No Added Refined Sugar

This salad suits a light meal and comes together very fast. The vegetables are crisp, the dressing sweet and sour, and a thin coat of Lean Mayo adds a light richness. Dressed too early, the leaves weep and go limp.
Wet leaves also thin the dressing out. Here the vinaigrette is mixed separately and tossed through first, and the Lean Mayo follows with a gentle hand. The vegetables have to be spun properly dry before they go into the bowl.
This batch weighs about 1.9kg, at roughly 28 calories per 100g.
Method
Wash 8 heads of lettuce in lightly salted water, cut them into bite sized lengths and leave them in a colander to drain.
Rinse 4 cucumbers, trim both ends and slice them thinly. Core and rinse 8 tomatoes and cut them into wedges. Trim and rinse 200g cilantro and chop it small.
Mix the vinaigrette: put 3 tablespoons vinegar and 2 tablespoons kOBE Monk Fruit Blend in a bowl and stir until dissolved with 1 tablespoon water, 1 tablespoon sesame oil, half a tablespoon salt and 1 teaspoon ground pepper, then stir again so everything comes together.
Put the lettuce, cucumber, tomato and cilantro in a large bowl, pour over the vinaigrette and toss.
Add 4 tablespoons Lean Mayo, toss gently to coat, then turn out onto a plate and serve at once.
Tips
Dress the salad right before eating so the vegetables do not weep.
For a lighter finish, drop the Lean Mayo to 2 tablespoons and lift the vinaigrette, and the flavor still carries.
Cilantro at 200 grams is a lot, so chop it fine and scatter it gradually if the aroma is unfamiliar.
Slice the cucumber, sprinkle a little salt, leave it 5 minutes and blot it dry to draw off water.
Scoop the seeds out of the tomato before cutting wedges so the bowl does not go wet after a few minutes.
Spin the leaves properly dry before dressing, since pooled water thins the sauce.
