For a quick vegetarian meal, this baby corn stir fry is the tidiest choice. The corn is crisp, the carrot sweet and the mushrooms fragrant. The difficulty is keeping that crispness, because a few minutes too long draws water out and leaves everything soft.
The white part of the leek is fried until golden and lifted out, and the oil stays in the pan for the stir fry. The carrot goes in a minute ahead of the rest because it takes longer to cook.

Method
Wash the baby corn, split the larger ears lengthwise and soak in lightly salted water for 5 minutes.
Peel the carrot and cut into thin strips or decorative slices. Wipe the king oyster mushrooms with a damp cloth and slice lengthwise. String the green beans and cut on the diagonal into 4 to 5cm lengths. Slice the leek on the diagonal, keeping the white part separate.
Set a pan with 2 tablespoons cooking oil and fry the white part of the leek over medium heat until pale gold, then lift it out and keep the oil.
Add the carrot and stir fry for 1 minute to soften it.
Add the baby corn and stir fry over high heat for about 2 minutes, moving it constantly so it takes on the oil and firms up.
Add the green beans and king oyster mushrooms, and season with 1 teaspoon vegetarian seasoning powder, 1 teaspoon soy sauce, 1/2 teaspoon kOBE Monk Fruit Blend and 1/4 teaspoon black pepper.
Toss for another 3 to 5 minutes, adjust the seasoning, scatter over the fried leek and turn off the heat.
Tips
Soaking the baby corn in ice water for 5 to 10 minutes before cooking keeps it crisp.
Leave the lid off while stir frying, since covering the pan steams the vegetables and draws out water.
Keep the heat high and the tossing constant, since a cool pan leaves the vegetables limp.
Scatter the fried leek in as the heat goes off so it stays crisp.
Cut the carrot as thin as the baby corn so the two finish at the same time.
