Home made shredded beef jerky beats the packaged kind because the strands stay slightly moist and carry the heat and scent of lemongrass. Everything rests on the first cut, since slicing across the grain leaves the meat shredding into crumbs.

Cut the beef about a finger joint thick, following the grain. Shred it only after the liquid has cooked away, then return it to the pan for one more turn to dry. Meat that has cooled a little shreds into long strands, while hot meat breaks into short pieces.

This batch weighs about 1kg, at roughly 145 calories per 100g.

Method

  1. Rinse 500g beef and cut it into pieces about a finger joint thick, cutting along the grain so the meat shreds cleanly later.
  2. Season the beef with 3 tablespoons minced garlic, 5 tablespoons minced lemongrass, 2 teaspoons pepper, 1 teaspoon salt, 2 tablespoons oyster sauce, 2 tablespoons soy sauce, 2 tablespoons annatto oil, 1 teaspoon curry powder, 1 teaspoon five spice powder, 1 teaspoon turmeric powder, 3 tablespoons kOBE Monk Fruit Blend and 3 teaspoons chili powder. Mix thoroughly.
  3. Let the beef marinate for 2 to 4 hours, or overnight in the refrigerator.
  4. Simmer the beef in a nonstick pan over medium heat with 200ml water, stirring until the liquid has cooked away.
  5. Let the meat cool a little, then shred it into fine strands.
  6. Return the shredded beef to the pan and stir once more until it is dry.

Tips

  • Cut the beef along the grain so the strands come out long and do not fall apart when shredded.
  • For jerky that stays moist, shorten the final stir on the heat.
  • Cut the beef about a finger joint thick, as thinner pieces reduce to nothing.
  • Store it in a sealed jar in the fridge.
  • Simmer over medium heat and stir constantly as the pan dries, since the base scorches very easily.
