Bo Luc Lac (Shaking Beef with Potatoes), Made with Monk Fruit Sweetener

Bo luc lac is loved for square cut beef that is seared outside and still juicy inside. The hard part is that beef gives up water fast, and a moment too long in the pan turns it tough. Bell pepper and onion go soft just as quickly.

The potatoes are cut into batons, soaked in lightly salted water for 15 minutes, then fried for 10 minutes until crisp and golden. One tablespoon of that frying oil is kept back for the garlic, since it is already full of flavor.

This batch weighs about 1.5kg, at roughly 146 calories per 100g.

Method

  1. Rinse the beef in lightly salted water, drain, and cut into cubes about the size of a finger joint.
  2. Marinate the beef with 1 teaspoon seasoning powder, 1 teaspoon kOBE Monk Fruit Blend and 2 teaspoons soy sauce. Leave for 15 minutes.
  3. Mince the garlic. Cut the spring onion into lengths of two finger joints. Cut the onion and bell pepper into squares one finger joint wide.
  4. Peel the potatoes, cut into batons three finger joints long, and soak in lightly salted water for 15 minutes.
  5. Set a pan with 100ml oil, and once it is hot, fry the potatoes for 10 minutes until evenly crisp and golden, then lift onto paper towels.
  6. Keep 1 tablespoon of the oil, turn the heat high, and fry the minced garlic until fragrant.
  7. Add the beef and stir fry for 3 minutes until it firms up.
  8. Add the onion and bell pepper, stir fry for another 3 minutes, season with salt and pepper, add the spring onion, then turn off the stove. Serve with the fried potatoes and chili sauce.

Tips

  • High heat and quick tossing keep the beef tender and stop it from giving up water.
  • Soaking the bell pepper and onion in ice water for 5 to 10 minutes keeps them crisp.
  • Rest the fried potatoes on paper towels, since a closed lid softens them straight away.
  • Evenly cut cubes mean every piece of beef is done at the same moment.
  • Fry the potatoes first and cook the beef after, as the other way round leaves the meat cold by the time it reaches the plate.
