Thai Rolled Ice Cream, No Added Refined Sugar

Thai rolled ice cream means spreading the mixture very thin on a cold pan and then pushing it into rolls. It is fun because the rolls are soft and cold, shot through with pieces of brownie and crisp cocoa biscuit. The hardest part is the thickness, since any thicker patch breaks as the roll comes up.

The pan has to be really flat and properly cold, with a full 3 to 4 hours in the freezer before anything will roll. Let the baked biscuits cool completely before breaking them up, because warm ones go soft the moment they hit the milk mixture.

This batch weighs about 280g, at roughly 234 calories per 100g.

Method

  1. Mix 5.4g of flour, 2.6g of softened unsalted butter, 1.4g of cocoa powder and 2.4g of kOBE Monk Fruit Blend into a dough, roll it out 3mm thick, and bake at 160 degrees C for about 15 minutes until crisp. Let it cool completely before breaking it up.
  2. Put 80ml of oat milk, 120ml of whipping cream, 23.6g of kOBE Monk Fruit Blend and 1 teaspoon of salt into a deep pot.
  3. Whisk until dissolved and the mixture comes together thick, heat it through on the stove, then let it cool.
  4. Pour the mixture onto a large flat pan, add 1 small piece of brownie and the broken biscuits, and crush them with two large spoons or a scraper.
  5. Stir the biscuit through the milk mixture and spread it out really thin across the whole pan.
  6. Put the pan in the freezer for 3 to 4 hours.
  7. Take it out, push the ice cream into rolls with the scraper, and lift them into glasses.

Tips

  • The thinner the ice cream is spread, the easier it rolls, and thick patches break when the scraper pushes through.
  • Dip the scraper in hot water and wipe it dry before pushing, and the surface of the rolls comes out smooth.
  • The mixture has to be completely cool before it goes onto the pan, since a warm one freezes unevenly.
  • Lift each roll into a chilled glass as it comes up, because a few minutes in the open air flattens it.
  • A few thin slices of fruit or some toasted almonds on top keep it from feeling heavy.
