This pumpkin and lotus seed smoothie blends up thick and smooth, in a bright orange that catches the eye. The tricky part is the lotus seed germs, since a single one left behind turns the whole glass bitter.
A toothpick pushes the germ out of each seed before boiling. The pumpkin steams for about 10 minutes until tender, then goes into the blender with oat milk and ice and blends until completely smooth.
This batch weighs about 215g, at roughly 93 calories per 100g. It suits a quick breakfast or a light afternoon snack.
Method
Peel the green skin off the lotus seeds and push the germ out of each one with a toothpick so the smoothie does not turn bitter.
Boil 100g fresh lotus seeds with a pinch of salt until tender, then drain them in a colander.
Peel the pumpkin, cut it into pieces and steam for about 10 minutes until tender.
Put the lotus seeds and 50g steamed pumpkin in a blender with 20ml unsweetened oat milk, 45g kOBE Monk Fruit Blend and ice cubes.
Blend until completely smooth, then pour into a glass and serve.
Tips
Choose fresh pumpkin with deep yellow flesh for a bright orange red smoothie.
Tasting too early reads flat because the kOBE Monk Fruit Blend has not dissolved, so wait 5 minutes and taste again.
Ten minutes of steaming is enough for the pumpkin, since longer leaves it waterlogged and thins the glass.
Let the lotus seeds and pumpkin cool a little before blending, as the ice then melts less and the smoothie stays thick.
A splash of young coconut water while blending gives a lighter, more fragrant glass.
