Matcha chocolate truffles come out soft and melting, with the green tea rising through the richness of the chocolate behind it. The hardest part is judging how firm the mixture is before rolling.
A mixture still loose slumps out of shape, while one chilled too long cracks as it is rolled. Roll fast and keep your hands cool.
This batch weighs about 271g, at roughly 434 calories per 100g.
Method
Melt 128g of finely chopped unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 43g of finely ground kOBE Monk Fruit Blend and stir until smooth and glossy.
Heat 100g of whipping cream until small bubbles just appear, then lift it off the heat.
Stir in 1 and a half teaspoons of matcha powder and leave it about 5 minutes for the tea to steep out.
Pour the whipping cream mixture into the bowl of chocolate and stir until smooth and glossy.
Chill it in the fridge or the freezer until the mixture is firm enough to roll.
Roll it quickly into evenly sized balls.
For a chocolate coating, melt more unsweetened dark chocolate chips with finely ground kOBE Monk Fruit Blend at three parts chips to one part blend, drop each ball in to coat, and lift them onto a tray lined with baking paper.
For a matcha coating, drop the rolled balls onto a plate of matcha powder and roll them gently until fully covered.
Keep them in the fridge and eat them over the following days.
Tips
Wearing disposable gloves and rinsing your hands in cold water before rolling helps the truffles hold their shape for longer.
An ice cream scoop portions the mixture evenly before rolling, so the truffles all come out the same size.
Sifting the matcha powder before rolling gives a smooth coating with no lumps.
A mixture still loose needs another 10 minutes of chilling, because rolling too early leaves the balls slumping.
Keep them in a sealed box in the fridge and eat within 3 days.
