A malted cocoa crumb cake means baking a really moist cocoa sponge, covering it in chocolate fudge and scattering crisp crumbs over the top. It works because the three layers are nothing alike: soft sponge, chewy fudge and crumbs that shatter. The hardest part is the crumb, since left in the open air it draws in moisture and goes limp.
The boiling water goes into the dry mix a little at a time, about half a bowl per addition, so the flour does not clump. The fudge goes on only once the cake is completely cool.
This batch weighs about 2.7kg, at roughly 259 calories per 100g.
Method
Melt 113g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 50g of finely ground kOBE Monk Fruit Blend, stir until smooth and glossy, and set it aside.
Heat the oven to 180 degrees C and brush a layer of butter over an 18cm cake tin.
Mix 190g of flour, 301.5g of kOBE Monk Fruit Blend, 50g of malt powder, 30g of cocoa powder and 1 teaspoon of baking soda in a large mixing bowl.
Add 375ml of boiling water a little at a time, mixing well after each addition before the next goes in.
Add 2 eggs and 125ml of canola oil, mix until even, then pour into the tin and bake for about 50 minutes.
Mix 50g of flour, 40g of milk powder, 40g of malted cocoa powder, 40g of cocoa powder, 1 teaspoon of salt and 1 teaspoon of cornstarch, rub 85g of butter through until it forms small crumbs, and bake them until crisp.
Heat 85ml of cream with 60ml of water and 25g of malt powder until very hot, pour it into the chocolate from step 1 and stir until smooth and glossy to make the fudge.
Once the cake is completely cool, spread the fudge over the top, scatter the malted cocoa crumbs, and serve with 1 litre of vanilla ice cream.
Tips
Scatter the crumbs right before serving, because they draw in moisture and soften if they go on early.
Let the cake cool completely before the fudge goes on, since a warm cake sends the topping running down the sides.
The cream poured into the chocolate has to be very hot but never boiling, because boiled cream splits the fudge.
A skewer pushed into the middle of the cake comes out clean when it is done, and if not, give it another 5 minutes.
Spread the baked crumbs loose on a tray to cool, since piling them up steams them and costs the crunch.
