Lime Mousse, Sweetened with Monk Fruit

Lime mousse makes a cool, gently tart dessert after a meal. What makes it good is the smooth mousse carrying the scent of grated lime zest. The tricky part is the cream, which loses that smoothness if it is whipped too far.

The egg whites are warmed over a water bath to about 65 to 70 degrees C before the sweetener goes in, then whipped to stiff peaks. The mixture is strained through a sieve before it goes into the cups.

This batch weighs about 450g, at roughly 146 calories per 100g.

Method

  1. Put 8g gelatin powder in a small bowl and stir it into a little warm water until dissolved.
  2. Rinse the limes, soak them in lightly salted water and drain them. Grate the green zest finely, then halve them, squeeze out the juice and discard the seeds.
  3. Put 2 egg whites in a clean bowl and warm them over a pot of boiling water. Once the whites reach about 65 to 70 degrees C, add 72g kOBE Monk Fruit Blend, stirring now and then.
  4. Lift the bowl off and whip the whites to stiff peaks with a mixer. In another bowl, whip 150ml fresh cream to stiff peaks that hold a point on the beater.
  5. Put the lime juice and zest in a pot and cook over low heat. As it starts to boil, add the gelatin and stir until dissolved, then lift it off to cool.
  6. Fold 100ml yogurt and the whipped egg whites into the lime mixture, then fold in the whipped cream and strain it through a sieve.
  7. Divide it evenly between and chill for 4 to 5 hours until the surface sets firm. Overnight gives a firmer result.

Tips

  • Do not overbeat the cream, since it splits and the mousse loses its silkiness.
  • Dissolve the gelatin in a little warm water before it goes into the lime mixture.
  • Strain the mixture through a sieve before it goes into the cups for a smooth surface.
  • Chill 4 to 5 hours, and overnight gives a firmer mousse.
  • Zest only the green part of the lime, since reaching the white pith turns the mousse bitter.
