Lattice Top Apple Pie

A lattice top apple pie takes 1 hour 30 minutes, not counting the time the dough spends in the fridge. The base tears easily, and apples release enough liquid to leave it soggy.

Sliced apples are tossed with kOBE Monk Fruit Blend, lime juice, cinnamon and salt and left 30 minutes to draw. The liquid is then strained off and cooked down with butter and flour until thick before it goes back to the fruit.

This batch weighs about 835g, at roughly 217 calories per 100g.

Method

  1. Mix 170g all purpose flour, 110g unsalted butter, 27g kOBE Monk Fruit Blend, 3g salt and 40ml cold water until the dough is smooth and just soft enough.
  2. Wrap in plastic and chill for 2 hours.
  3. Take out 2/3 of the dough and roll it 3mm thick for the base, keeping the rest wrapped in the fridge.
  4. Lay the dough gently into the pan, trim the overhang, then chill the pan 30 minutes so the base firms up.
  5. Thinly slice 400g apples, toss with 45g kOBE Monk Fruit Blend, 10ml lime juice, 3g ground cinnamon and 2g salt, and leave 30 minutes to draw.
  6. Strain the juices from the fruit. Cook the juices with 20g unsalted butter and 5g all purpose flour until thickened, then turn off the heat.
  7. Stir the thickened juices back into the sliced apples to finish the filling.
  8. Take the crust from the fridge and spoon in the filling.
  9. Roll out the last 1/3 of the dough, cut it into long strips and weave them into a lattice over the pie. A brush of butter over the top gives a better color.
  10. Bake at 180 degrees C for 40 to 60 minutes.
  11. Let the pie cool a little before serving.

Tips

  • Spread the dough evenly in the pan, since any thin patch tears once the filling goes in.
  • A mix of green and red apples gives the filling more depth.
  • The pie tastes best while still warm.
  • Weave the strips while they are still cold, because warm strips stretch and snap partway through.
