This five egg sponge rises tall, with a soft crumb and an even, open texture. It is the base layer for a cream cake, or something to eat plain with tea. Holding on to the air is the hardest part, since heavy handed mixing drops the batter right in the pan.
The eggs need about 10 minutes of whipping, until they are thick and softly peaked with clear ribbons on the surface. The flour is folded in by hand, or mixed on low speed for exactly 8 seconds and no longer.
This batch weighs about 577g, at roughly 190 calories per 100g.
Method
Mix 15ml oat milk with 15ml cooking oil and set it aside.
Put 5 chicken eggs in a clean bowl and whip on medium speed. Once large bubbles appear, add 1/4 teaspoon salt and half a teaspoon of cream of tartar.
Turn the mixer to high speed. When fine bubbles appear, add half a teaspoon of vanilla and 126g kOBE Monk Fruit Blend a little at a time. The whole process takes about 10 minutes, and it is ready when the mixture is thick, softly peaked and clearly ribboned.
Pour the milk and oil mixture down the side of the bowl and mix on low speed until even.
Sift 140g cake flour number 8 into the bowl and fold it in by hand, or mix on low speed for about 8 seconds and stop.
Line the pan with baking paper, fill it 2/3 full and tap it on the bench to break the large bubbles.
Heat the oven to 170 degrees C for 10 minutes, then bake for about 45 minutes until the cake is golden brown and fragrant.
Turn the cake out onto a rack so the steam can escape.
Tips
The vanilla here is there to take the raw edge off the eggs.
A pan filled to the top overflows as the cake rises.
Folding keeps the air in, while heavy mixing drops the batter.
kOBE Monk Fruit Blend dissolves slowly, so add it a little at a time while the mixer runs, since dumping it in at once knocks the air out of the eggs.
kOBE Monk Fruit Blend does not caramelize, so the top stays paler and a skewer is a better test than color.
Eggs at room temperature whip up faster than cold ones.
