Oven baked hot dog rolls suit breakfast or an afternoon snack. What makes them is the soft, open crumb wrapped around a hot sausage. Yeast is fussy about heat, and milk that gets too hot leaves the dough flat.
The milk only goes as far as the first fine bubbles before the heat is turned off. The dough proves for 1 hour, and the shaped rolls prove for another 30 minutes before they go into the oven.
This batch weighs about 1kg, at roughly 391 calories per 100g.
Method
Warm 110ml unsweetened oat milk until fine bubbles appear, then turn off the heat and pour it into a large bowl.
Add 4g bread yeast, 1 egg, 22.5g kOBE Monk Fruit Blend, 250g all purpose flour, 25g unsalted butter and 4g salt to the milk and mix through.
Knead by hand until the dough no longer sticks, put it in a bowl, cover with cling film and prove for about 1 hour.
Knead the dough again and divide it into 6 to 8 equal pieces to match the number of sausages, rolling each one into a strip as long as a sausage.
Set a sausage at one end of each strip and roll it up, working through all the sausages.
Line a tray with baking paper, arrange the rolls on it, cover with a cloth and prove for another 30 minutes.
Heat the oven to 180 degrees C for 10 minutes. Mix 1 egg yolk with 1.5 to 2 tablespoons oat milk.
Brush the yolk mixture over the rolls, scatter on 1 teaspoon sesame seeds and bake at 180 degrees C for 18 to 20 minutes.
Take the rolls out of the oven and serve them hot with 1 tablespoon ketchup and 1 tablespoon chili sauce.
Tips
Instant dry yeast needs no separate activation and is sold at baking supply shops.
Without an oven, an air fryer at 170 degrees C for about 15 minutes works, turning the tray halfway for even color.
The rolled dough needs another 30 minutes of proofing before baking, and skipping it gives a dense crumb.
Warm the milk only to the point of fine bubbles, since hot milk kills the yeast and the dough will not rise.
