Korean Soy Marinated Tofu, Made with Monk Fruit Sweetener

Korean soy marinated tofu comes out as a cool savoury sweet dish that goes beautifully with hot rice. The tofu is cut into pieces and sits in soy sauce loosened with kombu broth for about an hour until it takes on the flavour.
The tricky part is that tofu still holding water thins the marinade and dulls it. Three minutes in the microwave at 700W, then draining every drop before the soy goes in, is what fixes it, and the marinade is poured in two stages: just enough to come partway up first so the onion, garlic and chili can be spread over, then the rest to cover.
This batch weighs about 555g, at roughly 77 calories per 100g.
Method
Rinse 300g of white tofu and cut it into bite sized pieces. Put them in a glass container and microwave for 3 minutes at 700W, then take it out and pour off the water.
Chop the onion and spring onion small, peel and mince the garlic, and rinse the horn chili before slicing it.
Mix the marinade: 125ml of kombu broth, 70ml of soy sauce, 30ml of kOBE Monk Fruit Blend syrup and 30ml of fish sauce, stirred until dissolved.
Pour the marinade in until it comes partway up the tofu, then add the onion, spring onion, minced garlic and horn chili and spread them evenly.
Pour in the rest of the marinade to cover the tofu, put the lid on and refrigerate for about 1 hour before serving.
Tips
kOBE Monk Fruit Blend is a powder, and stirred with a little warm water it becomes a syrup that dissolves straight into the soy sauce.
Kombu broth is made by soaking dried kombu in cold water and warming it gently, never at a long hard boil, which would turn it slippery.
Without a microwave, blanch the tofu in boiling water and drain it very well.
Pour off the water in the container carefully before the soy goes in, since wet tofu makes the marinade taste flat.
The dish keeps in the refrigerator for 3 days, and any longer turns the flavour harshly salty.
