Italian Sesame Grissini Breadsticks

Italian sesame grissini are thin sticks that snap, coated all over in toasted sesame. The tricky part is rolling and cutting the sticks to an even size.

They bake twice, first at 200 degrees C for 15 minutes, then again at 120 degrees C for another 15 minutes once cooled. A thin brush of water before rolling in sesame is what makes the seeds stick.

This batch weighs about 492g, at roughly 297 calories per 100g. Cool the sticks completely, then keep them in an airtight box and eat them over the next few days.

Method

  1. Mix 200g of bread flour, 1/2 teaspoon of salt, 1 teaspoon of instant yeast, 2 tablespoons of kOBE Monk Fruit Blend and 1 tablespoon of dried parsley with 125ml of water in a stand mixer on medium speed. After 5 minutes, add 1 tablespoon of olive oil and keep kneading until the dough is elastic and smooth and pulls away from the bowl.
  2. Turn the dough out, knead it briefly by hand, cover it with a large bowl or a sealed bag and leave it for 20 minutes to rise evenly.
  3. Dust the dough with a little flour and roll it into a rectangle about 1cm thick.
  4. Cut the dough into thin sticks about 1.5cm wide and a hand span long, then roll each one lightly to round it off.
  5. Brush each stick with a thin layer of water and roll it through a plate of toasted white sesame seeds. Lay them on a lined tray, sprinkle over a little salt and rest for 10 minutes.
  6. Bake at 200 degrees C for 15 minutes until evenly golden. Take them out to cool, then bake again at 120 degrees C for 15 minutes for a crisper texture and better color. Cool completely before serving.

Tips

  • Baking twice is the key to a stick that snaps.
  • To check the yeast, stir it into warm water and look after 15 minutes, as active yeast foams up into a thick head.
  • Add the olive oil after 5 minutes of kneading, since oil from the start keeps the dough from coming together elastic.
  • Keep them at room temperature and eat within 2 to 3 days.
