Crispy Chicken Wings in Yellow Mustard Sauce, Made with Monk Fruit Sweetener

These crispy chicken wings in yellow mustard sauce suit a quick rice dinner. The skin is crisp, the sauce is mildly tangy and hot, and the color is a bright gold. The difficulty is that seasoning tends to sit on the batter and go no further.
Prick the thick parts of the meat with the tip of a knife before the pepper goes on, and both batter and seasoning can reach the inside. Drain the fried wings well before they are tossed in the sauce.

Method
Cut the chicken wings in half, prick the thick parts with the tip of a sharp knife, then season with 1/2 teaspoon of black pepper.
Mix the sauce from 2 tablespoons of yellow mustard, 1 tablespoon of soy sauce, 1/2 teaspoon of kOBE Monk Fruit Blend and 3 tablespoons of water.
Cut the onion into wedges and the spring onion into 3cm lengths.
Set a pan on the stove. Coat the wings in the dry crispy frying mix and fry them until golden, then lift them out to drain.
Fry 1 tablespoon of chopped shallot and 1 teaspoon of minced garlic until golden, then add the onion and 2 tablespoons of chopped red horn chili and stir briefly.
Pour in the sauce and stir well, turn off the heat, add the spring onion, then tip the wings into the pan and toss to coat.
Arrange the wings on a plate and serve hot with rice.
Tips
Pricking the wings lets the coating and seasoning reach deeper for a fuller flavor.
Yellow mustard is sold at large supermarkets and import grocers, and green mustard is a completely different taste so it does not stand in.
The dry crisp coating can be crispy frying flour mixed with a little cornstarch.
Take the pan off the heat before tossing the wings in, because tossing over the flame softens the crust at once.
Cook the onion only until it turns slightly translucent, since soft collapsed onion loses the sweet crunch on the plate.
