For a busy weekend table, air fryer honey BBQ pork ribs are a safe bet. The meat falls apart while the surface keeps a glossy finish. The difficulty is that ribs roasted uncovered dry out.
Wrap them in foil with sliced onion, shallot and garlic and roast at 170 degrees for 1 hour, opening the parcel only for the last 10 minutes to brush on the glaze.
This batch weighs about 1.6kg, at roughly 241 calories per 100g.
Method
Rub the 1.3kg of pork ribs thoroughly with salt to clean them, rinse them and leave them to drain. Peel 30g of shallot and 30g of garlic and slice them very thinly. Peel 130g of onion and cut it into rounds.
Put the ribs in a large bowl, add the sliced shallot and garlic, then season with 1/2 teaspoon of salt, 1 teaspoon of seasoning powder, 1 teaspoon of chili powder, 1/2 teaspoon of ground pepper, 1 tablespoon of fish sauce and 1 tablespoon of BBQ marinade sauce. Mix until the ribs are coated all over.
Cover the meat and marinate it in the fridge for at least 1 hour.
Make the glaze by mixing 2 tablespoons of honey, 2 tablespoons of ketchup, 1 tablespoon of chili sauce and 1 tablespoon of BBQ marinade sauce.
Lay out a large sheet of foil, spread the onion rounds over it, set the ribs in the middle, pile the shallot and garlic on top, cover with the rest of the onion and seal the foil tightly.
Put the parcel in the air fryer and roast at 170 degrees for 1 hour.
Take the ribs out, open the foil, brush off the shallot and garlic from the surface and paint on a layer of the glaze.
Return the ribs to the air fryer and roast at 180 degrees for 5 minutes, then turn them, brush on the rest of the glaze and roast for another 5 minutes at 180 degrees.
Tips
The foil wrap for the first hour is what keeps the ribs tender rather than dry.
Open the foil only at the end, for glazing and color.
Without an air fryer, roast at 170 degrees for 1 hour in the oven and finish at 200 degrees for 10 minutes.
BBQ marinade sauce is sold ready made in supermarkets, or mix your own from a BBQ sauce recipe.
Honey is still sugar, so a thin coat is enough for a glossy surface.
One hour in the fridge is the minimum, and overnight gives a deeper flavor.
