Dui Ga Nau Sua Yen Mach, No Added Refined Sugar

Dui ga nau sua tuoi gives a lightly rich sauce scented with curry, and the whole pot disappears once hot bread goes in. The tricky part is that the sauce clouds and foams easily.

The chicken legs need a full 3 hours in the marinade before frying, or the inside stays bland. Once the milk goes in, careful skimming is what keeps the sauce clear.

This batch weighs about 1.4kg, at roughly 197 calories per 100g. Ladle it into a bowl and serve hot with a freshly baked baguette.

Method

  1. Rinse the chicken legs, pat them dry, then marinate with 1 tablespoon minced leek, 1 teaspoon pepper, 1 teaspoon salt, 1 tablespoon cooking oil and 1 tablespoon soy sauce. Leave for 3 hours.
  2. Heat 250ml cooking oil in a pan and fry the chicken legs golden over medium heat. Once cooked, lift them into a colander lined with paper towel.
  3. Peel the onion, rinse it, and cut it into thin rings.
  4. Fry 2 tablespoons minced garlic and the leek in a little cooking oil until fragrant, add 1 teaspoon chili curry powder and 4 bay leaves, and stir over low heat for 1 minute.
  5. Add the chicken legs and toss for 3 minutes, pour in 100ml chicken stock, bring it to a boil, skim, then lower the heat. Simmer gently for about 15 minutes.
  6. Add 250ml unsweetened oat milk with the remaining 1 teaspoon salt and 1 teaspoon kOBE Monk Fruit Blend, bring to a boil, lower the heat and skim thoroughly. Add the onion rings, cook for another 5 minutes, then take the pot off the heat.
  7. Ladle the chicken into a serving bowl and eat hot with bread.

Tips

  • A full 3 hours in the marinade is what carries the seasoning into the meat before frying.
  • Careful skimming after the milk goes in is what keeps the sauce clear and smooth.
  • Oat milk boils over easily, so drop the heat as soon as it goes in and leave the lid ajar.
  • Curry powder and bay leaves need only 1 minute over low heat, since longer turns the powder bitter.
  • Onion rings go in last and need only 5 minutes, long enough to sweeten while staying crisp.
