A tea shop matcha latte is built as two separate mixes poured one over the other: a creamy milk base below and whisked matcha above, with the line between them clearly visible. The matcha tastes full without any harshness and finishes lightly sweet.
The hardest part is the layering, since a heavy pour folds the two together. The matcha needs a full 30 seconds of whisking and then a few ice cubes to cool it before it goes in. The glass has to be packed with ice to the mark, or the matcha layer will not float.
This batch weighs about 195g, at roughly 42 calories per 100g.
Method
Put 5ml of oolong matcha powder and 50ml of boiling water in a glass, whisk 10 turns with a spring whisk, then add 6g of kOBE Monk Fruit Blend and 8ml of unsweetened oat milk.
Tilt the glass, whisk the mixture to a foam for 30 seconds, then drop in 3 ice cubes to cool it.
In a second glass, dissolve 20g of non dairy creamer powder in 50ml of boiling water, add 15ml of kOBE Monk Fruit Blend syrup and a trace of salt the size of a rice grain, stir well and drop in 2 ice cubes to cool it.
Pour the milk base into a 500ml glass and add ice cubes up to the first mark.
Pour the matcha down the side of the glass to keep the layers separate.
Finish with a ladle of 3Q oolong tapioca pearls on top.
Tips
For a stronger matcha, use 3g of matcha powder, 25g of non dairy creamer powder, 20ml of kOBE Monk Fruit Blend syrup and 100ml of boiling water.
For a 700ml glass, scale everything up and keep the same ratios.
kOBE Monk Fruit Blend dissolves slowly, so cook it into a syrup first, since the granules go gritty in a cold glass.
Water for matcha should sit around 80 degrees C, as fully boiling water turns the powder harsh and dulls it to a yellow tone.
Matcha poured down the side of the glass or over the back of a spoon is what keeps the two layers apart.
Whisking the matcha in a tilted glass for 30 seconds builds a fine foam that holds the top layer up longer.
