Che nha dam hat sen is good when the aloe is crisp and squeaky and the liquid is completely clear. The difficulty is the aloe, which stays slippery and bitter if it is not prepared properly.
Peel off all of the green skin, dice the aloe, rub it with a little salt and rinse it very thoroughly. The lotus seeds are cooked soft first, and only then does the aloe go in for about 10 minutes over low heat.

Method
Peel off the green outer skin of the aloe vera, then dice the flesh.
Add a little salt to the aloe, rub it gently, then rinse it clean to take away the bitterness and the slipperiness.
Rinse the lotus seeds and remove the green germ, or buy seeds that already have it removed.
Cook 100 g of lotus seeds with 1 liter of water until the seeds are soft.
Add the aloe, cook over low heat for about 10 minutes and skim the foam so the liquid stays clear.
Add 90 g of kOBE Monk Fruit Blend, cook for about 5 minutes more, then turn off the heat.
Ladle into bowls or cups. It is better chilled.
Tips
Rubbing the aloe with salt and rinsing it thoroughly is the step that decides whether the che is bitter and slippery or clean and crisp.
Skimming the foam while it cooks is what keeps the liquid clear.
Give the aloe exactly 10 minutes, since longer costs it the crunch.
Cook the lotus seeds soft before sweetening the pot, and the seeds will not turn firm again.
Dice the aloe evenly, since mixed sizes leave some pieces crisp and others soft.
