Blended Iced Chocolate, No Added Refined Sugar

Blended iced chocolate means blending ice with milk and chocolate sauce until it turns as fine as snow, then piling whipped cream on top. It works because it is icy cold and still carries a deep cocoa flavour. The hardest part is judging the ice, since too much washes it out and too little leaves it thin and quick to melt.

The order things go into the blender decides how fine it comes out. Liquids first, ice last, and doing it the other way round strains the motor and leaves the mixture gritty.

This batch weighs about 650g, at roughly 290 calories per 100g.

Method

  1. Melt 30g of unsweetened dark chocolate chips in a bowl set over a pot of hot water, add 10g of finely ground kOBE Monk Fruit Blend and stir until smooth and glossy.
  2. Mix the chocolate with 20ml of warm water into a thick sauce and let it cool a little.
  3. Put 400ml of whipping topping cream and 100ml of non dairy creamer in a bowl and run the mixer at its lowest speed for about 30 seconds to combine.
  4. Build up to top speed and beat steadily for 3 to 5 minutes until the cream holds peaks. Load it into a piping bag and keep it in the fridge.
  5. Into the blender go, in order, 60ml of unsweetened oat milk, the chocolate sauce, 20ml of kOBE Monk Fruit Blend syrup, 10g of frappe powder and finally 250g of ice cubes.
  6. Blend on the ice setting or at top speed for about 30 seconds, until the mixture is smooth with no rattle of ice left.
  7. Pour into a glass and pipe the cream over the top in a spiral from the outside in.
  8. Drizzle a little more chocolate sauce over the cream to finish.

Tips

  • The ice goes into the blender last, because putting it in first strains the motor and blends unevenly.
  • Let the chocolate sauce cool a little before blending, since hot sauce hitting ice sets into patches.
  • Keep a little sauce back for the top, as pouring all of it into the blender leaves nothing to finish with.
  • Keep the whipped cream in the fridge until serving, since warm cream slides straight off the top of the glass.
  • Chilling the glass beforehand keeps the blended ice from melting as fast.
