Crispy baked baguettes with a cheese cream spread make an easy afternoon snack, with a golden scorched top and a soft crumb underneath. The cheese spread is gently rich, and you can spread it as thick or as thin as you like.

The hardest part is cooling the sauce to the right point before spreading. Melting the cheese over the lowest possible flame and only then pouring in the milk is the key move. The common mistake is spreading the sauce while it is still hot and runny, so it slides off onto the tray in the oven.

Method

  1. Set a small pot over the lowest heat and add 120g soft cheese wedges, letting them melt slowly without catching.
  2. Once the cheese has melted into a liquid, pour in 110ml unsweetened oat milk in a slow stream, stirring constantly and evenly so no lumps form.
  3. Add 19g kOBE Monk Fruit Blend already dissolved in 24ml oat milk along with 15g unsalted butter, and stir a few more turns until smooth and glossy.
  4. Turn off the heat, add 20g mozzarella cheese and stir until fully melted. Let the mixture cool for about 10 minutes to thicken.
  5. Split 5 small baguettes lengthwise, either all the way through or leaving them hinged at the base.
  6. Spread the sauce evenly over the cut faces from edge to edge, not too thickly, smoothing the surface with the back of a spoon.
  7. Preheat an air fryer to 170 degrees C for 5 minutes, then bake for about 7 minutes until the tops are golden and the cheese is lightly melted. In a conventional oven, preheat to 180 degrees C for 10 minutes and bake for 10 to 12 minutes.

Tips

  • Dissolving 19g of powdered kOBE Monk Fruit Blend in 24ml oat milk first gives an evenly sweet sauce with no grittiness.
  • Keep the flame at its lowest the whole time the cheese is melting, since one minute of high heat scorches the base of the pot.
  • Letting the sauce cool a full 10 minutes to thicken is what gives a neat surface on the bread.
  • Spread thinly and evenly, because a thick layer runs down onto the tray once it heats up.
  • Two minutes out of the oven lets the top set, and that is when the bite is crisp.
