Baked cheese enchiladas give you a dish of corn tortillas rolled up under a spicy sauce and a golden brown layer of cheese. The tricky part is the sauce pot, where the flour clumps and catches on the base without steady stirring.
The tomato sauce, chili powder, flour and cocoa powder are stirred together while the pot is still cold, and only then does it go on the stove. Low heat and constant stirring dissolve the flour without scorching the base.
This batch weighs about 3.1kg, at roughly 135 calories per 100g.
Method
Grate 340g cheese. Peel and wash the onion, then dice it very finely or grate it.
Trim the spring onions, discard any yellowed leaves, wash them and slice them finely. Peel and chop 3 to 4 garlic cloves.
Preheat the oven to 180 degrees C.
Put 237ml tomato sauce, 1/2 teaspoon dried basil, the chopped garlic, 3 tablespoons all purpose flour, 3 tablespoons chili powder, 1 tablespoon cocoa powder and a little salt into a medium pot. Mix until no lumps remain, then add 710ml water.
Set the pot over low to medium heat and stir as it heats, so everything dissolves evenly and nothing catches on the base.
Heat a pan with a little cooking oil. Once it is hot, fry the corn tortillas for about 1 minute a side until golden, working through all 4.
Lay a tortilla on a plate, put the onion, grated cheese and spring onion down the middle and roll it up. Repeat with the rest.
Arrange the rolls in a baking dish, pour 480ml enchilada sauce over the top and scatter over more cheese.
Bake in the hot oven for about 5 minutes, or until the cheese has melted completely and turned golden brown.
Take the dish out, scatter over more spring onion and serve hot.
Tips
A sauce that thickens too far takes a splash of water to loosen it.
Corn tortillas can be swapped for wheat flour tortillas sold in Vietnamese supermarkets.
Where enchilada sauce is hard to buy, the sauce step in this recipe makes one from tomato sauce with chili powder, cocoa powder and flour.
