Oat milk cooked at home comes down to four jobs: soak, blend, strain and cook. The milk turns out lightly rich with a clear cereal aroma and none of that raw flour smell. The hardest part is managing the heat while it cooks, because oat milk thickens and catches on the base of the pot very easily.
Soaking a full 4 hours so the grains swell evenly, then rinsing several times, is the step that decides how clear the milk is and how it smells. The common mistake is blending too long and cooking too long, which turns the milk into a thick paste.
This batch weighs about 2.6kg, at roughly 11 calories per 100g.
Method
Put 500gr oats in a pot, add twice their volume in water, cover and soak for 4 hours or overnight so they swell evenly.
Rinse the oats several times to wash off the slime, put them in a blender with enough water to cover, then blend smooth.
Strain the mixture through a cloth bag and set the pulp aside. Keep the pulp for smoothies or to mix into baking.
Pour the milk into a pot with the rest of the water to make up 2 liters, cook over medium heat and stir steadily.
Once the milk has boiled for about 3 minutes, add 135gr kOBE Monk Fruit Blend, stir until it dissolves, then turn off the heat.
Let it cool, pour into glass bottles, seal them and keep them in the fridge at 4 to 6 degrees C, using the milk up within 3 days.
Tips
kOBE Monk Fruit Blend is a fine powder, so a few turns of the spoon in hot milk dissolve it completely.
Stir from the moment the pot starts to warm, since oat milk catches on the bottom very quickly.
Blend just until smooth and strain straight away, as a long blend releases more starch and turns the milk slimy.
Oats can also be blended with lotus seeds, black sesame or softened sweet potato for a change of flavor.
Milk made at home carries no preservatives, so it should not sit longer than 3 days. Any hint of sourness means it goes.
