Anyone who likes a sour sweet snack should know this chewy soursop preserve. It turns out smooth and pliable, gently tart, and a pale golden brown. The difficulty sits in the heat: too high and the pan scorches, too short and the preserve stays wet.

Layer the fruit and the sweetener alternately, finishing with a layer of sweetener on top, and leave it for 2 hours to dissolve. After that, keep the heat low and stir steadily for about 40 minutes.

This batch weighs about 1.4kg, at roughly 55 calories per 100g.

Method

  1. Rinse 1kg just ripe soursop gently, wear gloves to peel it and remove every seed, keeping only the white flesh in a clean bowl.
  2. Spread a layer of soursop flesh, then a layer from the 450g kOBE Monk Fruit Blend, and repeat to the end, finishing with sweetener on top. Leave it for 2 hours to dissolve and soak in.
  3. Set a large deep pan over the heat, warm it, then tip in all the marinated fruit and lower the heat.
  4. Stir gently and steadily for about 40 minutes, until the liquid is gone and the preserve is smooth, chewy and pale golden brown, then turn off the heat.
  5. Spread the preserve on a tray to cool completely, cut cellophane into 5x10cm pieces, place a portion in the middle of each and twist both ends like a candy wrapper.
  6. Put the wrapped pieces into a glass jar, seal it and keep it in the fridge for 1 to 2 months.

Tips

  • A full 2 hours of maceration lets everything dissolve and soak into the fruit.
  • Stir gently and steadily for the whole 40 minutes so the preserve turns out smooth and chewy without scorching.
  • Choose soursop that is just ripe, since overripe flesh goes watery and never cooks down chewy.
  • For a firmer, drier chew, spread the cooked preserve thin on a tray and sun dry it about 3 hours, turning it every hour before wrapping.
  • Wear gloves while peeling and seeding to keep the sap off your hands.
  • Let the preserve cool completely before wrapping, since wrapping it warm makes it weep.
