Hoa Qua Dam (Fruit and Yogurt Granola Cup), No Added Refined Sugar
Sweets and drinksChilled DessertsVietnamAbout 15 minutes
This fruit and yogurt cup takes about fifteen minutes and comes out cold, lightly tart and crunchy with granola. Keeping it good looking is the hard part, since fruit dropped in carelessly all sinks to the bottom.
Thin strawberry slices line the inside of the glass before the yogurt goes in, so a red border shows through from the outside. All the fruit is chilled first, which keeps the cup crisp and cold.
This batch weighs about 1.3kg, at roughly 56 calories per 100g.
Method
Wash everything and chill the ingredients before assembling.
Hull the strawberries, halve 5 of them and slice 2 thinly.
Wash 1 pear and cut it into small cubes. Wash 50g grapes and drain them. Squeeze the orange and strain the juice.
Line the inside of a glass with the thin strawberry slices.
Pour in 300g yogurt to about eight tenths of the height, add the strawberries, grapes and pear in turn, drizzle over the orange juice and scatter granola on top.
Tips
Fruit chilled before assembly keeps the cup crisp and cold and stops the yogurt from thinning.
Thin strawberry slices pressed against the glass before the yogurt goes in make the cup look its best.
Granola goes on right before eating, since it draws moisture and softens if it sits.
Orange juice strained of pulp leaves the cup clearer and smoother.
