This lime mayonnaise dressing takes 5 minutes and one bowl. It is lightly rich, brightly sour, fragrant with Dijon mustard and coats the leaves evenly.
The tricky part is the balance between sour and sweet, since too much lime makes it sharp. Whisk until smooth, then taste and adjust the lime or the honey before it goes onto the salad.
This batch weighs about 70g, at roughly 110 calories per 100g. Toss it through just before eating. The dressing suits vegetable salads and chicken salads, and is best used the same day.
Method
Put 3 tablespoons Lean Mayo into a small clean bowl for easy mixing.
Add 1 tablespoon lime juice, 1 teaspoon honey and 1/2 teaspoon dijon mustard to the Lean Mayo.
Add 1/4 teaspoon salt and 1/4 teaspoon ground pepper, then stir until the dressing is smooth.
Taste and adjust the lime or the honey to suit before tossing it through the salad.
Tips
Tossing the dressing through just before eating keeps the leaves crisp.
The dressing suits vegetable salads, chicken salads and other light dishes.
Honey is still sugar, so a light hand is enough.
Dijon mustard holds the dressing together, and steady stirring makes it smooth.
Leftover dressing keeps sealed in the fridge for two days.
