Green Bean Goma Ae (Japanese Sesame Salad), No Added Refined Sugar

This takes about 15 minutes. What makes it good is beans that still snap under a coating of ground sesame, nutty and lightly salty. The timing of the boil is the tricky part, since a moment too long turns the beans yellow and soft.

The sesame has to be toasted and then ground in a mortar, which smells far better than a machine grind. The beans come out to cool and drain completely, because any water left on them thins the sesame dressing.

This batch weighs about 182g, at roughly 77 calories per 100g. It suits a lunch box as a side.

Method

  1. Rinse 150g green beans, cut them into short bite sized lengths and boil them in water for 2 to 3 minutes.
  2. Lift the beans out to cool and drain.
  3. Meanwhile, grind 15g toasted sesame seeds fine, then add 2 to 3g kOBE Monk Fruit Blend and 10ml soy sauce and stir to combine.
  4. Toss the beans with the sesame, soy sauce and kOBE Monk Fruit Blend mixture and arrange them on a plate.
  5. A few whole sesame seeds scattered over the top finish the dish.

Tips

  • The soy sauce and the sweetener can shift with taste.
  • Sesame seeds toasted and ground in a mortar smell better than machine ground.
  • The dish is eaten cool and suits a lunch box side.
  • Taste the dressing after 5 minutes before deciding to adjust it.
  • Rinse the boiled beans in cold water and shake them properly dry, since water left on lets the sesame mixture slide off.
  • Boil the beans exactly 2 to 3 minutes and lift them out, as longer turns them yellow and limp.
