This creamy yogurt dressing takes five minutes and a small bowl. It is light and gently tart, without the weight of oil. The tricky part is the balance, as a heavy pour of lime juice makes it sharp.
Unsweetened yogurt forms the base, and a single tablespoon of Lean Mayo gives it enough body to cling to the leaves. Taste first, then adjust the honey or the lime juice before it meets the salad.
This batch weighs about 75g, at roughly 88 calories per 100g.
Method
Put 3 tablespoons unsweetened yogurt and 1 tablespoon Lean Mayo into a small bowl.
Add 1 teaspoon honey, 1 teaspoon lime juice and 1/2 teaspoon dijon mustard to the bowl.
Add 1/4 teaspoon salt and 1/4 teaspoon ground pepper, then stir until the dressing is smooth and even.
Taste and adjust the honey or the lime juice before serving.
Tips
A yogurt base tastes lighter than a dressing built on Lean Mayo alone.
This dressing suits vegetable salads, fruit salads and salads with nuts and seeds.
Honey is still sugar, so a light hand and a taste afterward work best.
Tossing the dressing through just before eating keeps the leaves from weeping.
