How to Make Cheese Sandwich with Crispy Fried Onion

For a rushed breakfast, a cheese sandwich with crispy fried onion is worth trying. The bread fries golden in butter, the cheese melts and the onion stays crunchy. Watching the butter is the hard part, since burnt butter turns the whole slice bitter.

Only two slices go in the pan at a time, with fresh butter between rounds, and that is what gives every slice an even golden color on both sides. The onion is coated in crispy frying flour and fried separately before it goes into the sandwich.

This batch weighs about 650g, at roughly 343 calories per 100g.

Method

  1. Put a fifth of the butter into a nonstick pan and melt it over medium heat. Once the butter is hot, add 2 slices of bread and fry until golden and crisp on both sides, then lift them out, add more butter and continue with the rest.
  2. Slice 200g cheese into pieces sized for 5 pairs of bread. One kind such as cheddar works, and so does a mix.
  3. Slice 100g onion into rings, toss them in crispy frying flour and fry until crisp.
  4. Lay the cheese on each slice, add the fried onion, close the sandwiches and press down lightly.
  5. Microwave each sandwich for 20 to 30 seconds so the cheese melts, then cut into triangles.

Tips

  • Ten slices of bread feed 2 people.
  • Rye bread or pumpkin bread works just as well for a change.
  • Chili sauce or ketchup both suit this sandwich.
  • The onion is fried first and drained on kitchen paper, since oily onion makes the bread go limp.
